  • 1/2 tsp ground ginger Adds warmth and depth of flavor.
  • 1/2 tsp pepper Balances sweetness with a slight kick.

Method

Preparation
  1. Place the cubed butternut squash and chopped carrots in a large pot. Cover with water and add 1/2 tsp of salt.
  2. Bring to a boil over medium-high heat.
  3. Cook for about 10 to 15 minutes, until vegetables are tender.
  4. Drain and transfer to a food processor or blender. Blend until smooth and creamy.
Cooking
  1. In the same pot, add ghee or butter and minced garlic. Cook over low heat for about a minute until fragrant.
  2. Stir in ground ginger, remaining 1/2 tsp salt, and pepper.
  3. Fold in the smooth butternut squash and carrot mash, stirring until heated thoroughly.

Notes

For an extra creamy texture, add a splash of vegetable broth or milk while blending. Experiment with herbs like thyme or rosemary for a unique twist. For a chunkier mash, blend only half of the mixture and mix with the unblended half.
