Main Ingredients
  • 1 pounds 1¼ pounds boneless, skinless chicken breasts Cut into ¼-inch (6-mm) strips
  • 2½ teaspoons 2½ teaspoons curry powder For flavoring the curry
  • 3 tablespoons 3 tablespoons vegetable oil For sautéing
  • 1 medium 1 medium yellow onion Finely chopped
  • 4 cloves 4 cloves garlic Minced
  • 1 tablespoon 1 tablespoon grated fresh ginger Adds a zesty kick
  • 2 cups 2 cups low-sodium chicken broth Use a high-quality broth
  • 1 tablespoon 1 tablespoon cornstarch For thickening the sauce
  • 2 teaspoons 2 teaspoons sugar Balances the spices
  • 1 cup 1 cup frozen peas No thawing needed
  • ¼ cup ¼ cup plain low-fat (2%) or whole Greek yogurt For creaminess
  • ¼ cup ¼ cup chopped fresh cilantro For garnish

Method

Preparation
  1. Sprinkle the chicken strips with ¾ teaspoon salt, ¼ teaspoon pepper, and 1 teaspoon curry powder.
Cooking
  1. Heat 1½ tablespoons of vegetable oil in a skillet over high heat until just smoking. Add chicken in a single layer and cook until lightly browned but still pink, about 3 minutes. Transfer cooked chicken to a bowl.
  2. In the same skillet, add remaining oil and onions. Reduce heat to medium and cook until softened, about 5 minutes.
  3. Stir in minced garlic, grated ginger, and remaining curry powder. Cook for 1 minute.
  4. Whisk together the chicken broth and cornstarch. Pour into skillet with sugar and ⅛ teaspoon salt. Bring to a boil, then reduce heat and cook until thickened, about 5 minutes.
  5. Add peas and previously cooked chicken. Simmer until chicken is cooked through, a few more minutes.
  6. Off the heat, stir in Greek yogurt and cilantro. Season with salt and pepper to taste.

Notes

Marinating the chicken with spices can deepen flavors. Fresh spices make a significant difference, and adding lemon juice before serving can brighten the dish.
