Ingredients

Main Ingredients
  • 2 lbs skin-on bone-in chicken breasts and/or thighs (trimmed of excess skin or fat) Juicy pieces of chicken that will cook tenderly, providing a rich base for your soup.
  • ¾ teaspoon salt To enhance the natural flavors of the ingredients.
  • ½ teaspoon freshly ground black pepper Adds a subtle heat.
  • 1 tablespoon vegetable oil Helps in browning the chicken.
  • 8 cups chicken broth Preferably not low-sodium for the best flavor.
  • 1 medium yellow onion (chopped) Adds a hint of sweetness.
  • 2 whole carrots (peeled and cut into ½-in pieces) Adds a touch of sweetness and vibrant color.
  • 2 ribs celery (cut into ¼-in pieces) Provides a beautiful texture.
  • 4 sprigs fresh thyme Lends a fresh note to the soup.
  • 1 whole bay leaf For a layer of depth and warmth.
  • 5 oz wide egg noodles These tender noodles soak up the flavors.
  • 2 tablespoons minced fresh dill Adds a refreshing herbaceousness.

Method

Preparation
  1. Season the chicken pieces generously with salt and pepper.
  2. In a Dutch oven or large soup pot, heat the vegetable oil over medium-high heat until shimmering.
  3. Carefully place the chicken in the pot, skin-side down, and cook undisturbed for 4 to 5 minutes until browned. Flip and cook for an additional 4 minutes.
  4. Add chicken broth, chopped onion, carrot pieces, celery, thyme, and bay leaf to the pot. Bring to a boil, then cover and reduce heat to low. Simmer until the chicken is cooked through (15-17 minutes for breasts, 20 minutes for thighs).
  5. Discard thyme and bay leaf, remove chicken from pot, and shred into bite-sized pieces.
  6. Bring soup back to a boil, add egg noodles, and cook until al dente. Check package instructions.
  7. Return shredded chicken to the pot, stir to combine, and cook until heated through. Adjust seasoning with salt and pepper.
  8. Stir in fresh dill just before serving.

Notes

Browning the chicken enhances depth of flavor. Keep an eye on noodles to prevent overcooking. Feel free to experiment with additional herbs or vegetables.
