Preparation
- Preheat the oven to 350°F (175°C). Line a baking sheet with aluminum foil.
- Slice each chicken breast in half horizontally. Place in a sealable plastic bag and pound to ¼-inch thickness.
- Add flour, ¾ teaspoon salt, and ¼ teaspoon pepper to the bag. Seal and shake to combine, then add chicken and coat evenly.
- Beat the eggs in a bowl. In another bowl, mix bread crumbs with ¼ teaspoon salt. Dip chicken in egg, then coat with bread crumbs.
Cooking
- Heat olive oil in a sauté pan over medium-high heat. Cook chicken for 2-3 minutes on each side until golden.
- Transfer chicken to the lined baking sheet and place in the oven for no more than 5 minutes.
- Discard excess oil from the pan. Add chicken stock, lemon juice, and capers, and bring to a boil. Let boil for 2 minutes.
Finishing
- Off the heat, swirl in butter until smooth, and add parsley. Adjust seasoning with salt and pepper.
- Remove chicken from the oven and spoon sauce over each piece.
Notes
Use fresh ingredients for better flavor. Allow oil to heat sufficiently for crispiness.
