Preparation
- Line a cutting board with plastic wrap, place chicken breasts in a single layer, and cover with another layer of plastic wrap.
- Pound chicken to about ¼ inch thickness using a meat mallet or heavy saucepan.
- Cut each cutlet in half for better portioning.
Dredging
- Set up three medium bowls: mix flour, garlic salt, paprika, and pepper in the first bowl.
- Beat eggs in the second bowl until well combined.
- Place panko breadcrumbs in the third bowl.
- Dredge each cutlet in the seasoned flour, then dip in eggs, allowing excess to drip off, and finally coat in panko breadcrumbs.
- Let the coated cutlets rest for about 10 minutes.
Cooking
- Heat a large non-stick or cast iron pan over medium heat, adding about 3 tablespoons of oil.
- When the oil shimmers, add cutlets in batches, cooking for 3-4 minutes on each side until golden.
- Transfer cooked cutlets to a paper towel-lined plate, and sprinkle with coarse salt.
- Continue frying remaining cutlets, adding more oil as necessary.
- Squeeze fresh lemon over schnitzels before serving.
Notes
Consider adding fresh herbs to the breadcrumb mixture. Marinate chicken for added flavor and tenderness before breading. Ensure oil is hot enough for proper crispiness.
