Ingredients

For the Sandwich
  • 12 tablespoons unsalted butter for toasting the bread
  • 1 1/3 pounds thinly sliced corned beef the main filling
  • 8 slices rye bread the base of the sandwich
  • 8 slices Swiss cheese for melting between the bread
  • 2 cups sauerkraut for adding tangy crunch
  • 1 cup Thousand Island dressing or Russian dressing for flavor

Method

Preparation
  1. Add 1 tablespoon of butter to a heated cast iron pan or griddle over medium to medium-high heat.
  2. Place about 1/3 pound of corned beef into the pan and warm for 4 to 6 minutes, stirring occasionally.
  3. Melt 1 tablespoon of butter and coat 2 slices of rye bread with it, placing them buttered side down in the pan to toast for about 2 minutes.
Assembly
  1. Once the bread is toasted, take it out and add another tablespoon of butter to the pan, heating until melted.
  2. Flip the bread over with the toasted side facing up.
  3. Spread approximately 1/4 cup of Thousand Island dressing on each slice of bread.
  4. Layer the sandwich starting with corned beef, followed by 2 slices of Swiss cheese, and then about 1/2 cup of sauerkraut.
  5. Place the second piece of toasted bread on top, dressing side down, and press gently.
Cooking
  1. Cook the assembled sandwich for 1 to 2 minutes on each side until the cheese melts and the bread is golden brown and crispy.
  2. Slice the sandwich in half and serve immediately.

Notes

For extra flavor, grill sauerkraut slightly before adding. Try a mix of cheeses or add jalapeños for some spice.
