- In a large pot, bring 4 quarts (4L) of water and 1 tablespoon of salt to a rapid boil.
- Carefully add the chicken wings, return to a boil, and let them boil for 7 minutes.
- Drain the wings thoroughly in a colander.
- Line a 13 x 18-inch (33 x 46 cm) baking sheet with aluminum foil or parchment paper.
- Place the drained wings on the baking sheet and blot dry with paper towels.
- Drizzle the vegetable oil over the wings, then sprinkle with salt, chili powder, cumin, and smoked paprika.
- Toss the wings until they’re evenly coated in the seasoning.
Baking
- Place the baking sheet in the preheated oven and bake for 15 minutes.
- Carefully remove the pan and flip the wings using tongs.
- Return the pan to the oven and bake for an additional 10 minutes.
Sauce Preparation
- While the wings are baking, whisk together the melted butter and Frank's Red Hot sauce in a small bowl.
Serving

- Serve with the homemade Buffalo sauce on the side.
Notes
Ensure to dry the wings well after boiling for optimal crispiness. Adjust spice levels based on your preference and consider pairing with celery sticks and ranch dressing.
