Ingredients

Main Ingredients
  • 16 ounces elbow macaroni Tender and fluffy, this pasta serves as the base of the dish.
  • 8 large hard boiled eggs Soft and creamy, they add a rich protein element. Consider adding 2 more for garnish.
  • 1.5 cups mayonnaise The creamy heart of the salad, providing that signature smooth texture and flavor.
  • 0.25 cups yellow mustard Adds a tangy kick that complements the other flavors.
  • 0.25 cups milk Ensures the salad stays creamy and not too thick.
  • 0.25 cups sweet pickles For a hint of sweetness and crunch.
  • 0.5 cups celery Fresh and crispy, it adds a nice textural contrast.
  • 0.25 cups green onion A burst of aromatic freshness.
  • 1 teaspoon salt To taste, enhances the overall flavor.
  • 0.5 teaspoon black pepper A dash of vibrant spice to round out the taste.

Method

Preparation
  1. Begin by cooking the elbow macaroni according to package directions. Cook for an additional 5 minutes until tender, then drain and rinse under cold water.
  2. Peel the hard-boiled eggs and cut them in half. Scoop out the yolks into a medium-sized bowl and chop the egg whites, setting aside.
  3. Mash the egg yolks with a fork until smooth. Whisk in the mayonnaise, yellow mustard, and milk until well combined. Season with salt and pepper.
  4. In a large bowl, mix the cooled macaroni with diced sweet pickles, chopped celery, and green onions. Pour in the egg yolk mixture along with the chopped egg whites and stir until well coated.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for at least two hours—or overnight for best results.
  6. If the salad seems too thick before serving, add a bit more mayonnaise or milk to achieve your desired consistency.

Notes

For variations, consider using different types of pickles, adding smoked paprika for flavor, or mixing in diced chicken or tuna for protein.
