Method
Cooking the Chicken
- Place the chicken breasts in a saucepan, covering them with at least 2 inches of water. Heat over high until boiling, then reduce to a simmer and cover, cooking for 14 minutes.
- Once cooked, remove the chicken immediately to prevent overcooking.
Preparing the Vegetables
- While the chicken simmers, dice the fresh cucumber and dill pickles into small pieces. Chop the fresh dill.
Mixing the Ingredients
- In a large mixing bowl, combine the diced cucumber, dill pickles, mayonnaise (or yogurt), pickle juice, chopped dill, and crushed red pepper. Stir until well incorporated.
Shredding the Chicken
- Allow the chicken breasts to cool slightly. Once manageable, use two forks to shred the chicken into bite-sized pieces.
Combining Everything
- Cool the shredded chicken completely. Mix it thoroughly with the cucumber and dill mixture until every piece of chicken is coated.
Chill and Serve
- Transfer the salad to the fridge to chill for at least 30 minutes. Serve cold on its own, in a sandwich, or over greens.
Notes
Adjust the mayo-to-yogurt ratio to your preference. Adding a squeeze of lemon can brighten up the dish. You can also add chopped celery or green onions for extra texture.
