Ingredients

Main Ingredients
  • 2 pieces boneless skinless chicken breasts Juicy and tender, these chicken breasts form the heart of your dish.
  • 1/2 cup fresh diced cucumber Opt for seedless English cucumber for its crispness and mild flavor.
  • 1 cup diced dill pickles These tangy bites add a delightful crunch and flavor.
  • 1/2 cup mayonnaise OR plain Greek yogurt Use a blend of mayo and yogurt for creaminess.
  • 2 tbsp dill pickle juice Adds zesty pickly flavor.
  • 2 tbsp fresh chopped dill Aromatic and flavorful.
  • 1/4 tsp crushed red pepper (optional) For a lovely kick.

Method

Cooking the Chicken
  1. Place the chicken breasts in a saucepan, covering them with at least 2 inches of water. Heat over high until boiling, then reduce to a simmer and cover, cooking for 14 minutes.
  2. Once cooked, remove the chicken immediately to prevent overcooking.
Preparing the Vegetables
  1. While the chicken simmers, dice the fresh cucumber and dill pickles into small pieces. Chop the fresh dill.
Mixing the Ingredients
  1. In a large mixing bowl, combine the diced cucumber, dill pickles, mayonnaise (or yogurt), pickle juice, chopped dill, and crushed red pepper. Stir until well incorporated.
Shredding the Chicken
  1. Allow the chicken breasts to cool slightly. Once manageable, use two forks to shred the chicken into bite-sized pieces.
Combining Everything
  1. Cool the shredded chicken completely. Mix it thoroughly with the cucumber and dill mixture until every piece of chicken is coated.
Chill and Serve
  1. Transfer the salad to the fridge to chill for at least 30 minutes. Serve cold on its own, in a sandwich, or over greens.

Notes

Adjust the mayo-to-yogurt ratio to your preference. Adding a squeeze of lemon can brighten up the dish. You can also add chopped celery or green onions for extra texture.
