Preparation
- Place onion and garlic in a food processor and pulse until roughly chopped.
- Add parsley, cilantro, and spices to the food processor and pulse until well-combined.
- Add the rinsed chickpeas and pulse 2-3 times until roughly chopped.
- Add flour and pulse 2-3 more times until combined, or fold in by hand for better texture.
- Transfer mixture to a bowl, cover with plastic wrap, and refrigerate for 2 hours or freeze for 25 minutes.
- After chilling, fold in baking powder gently.
- Using a cookie scoop, divide mixture into 12 balls, rolling them into uniform shapes.
Cooking
- Spray basket of the air fryer with olive oil and place falafel inside, spaced apart.
- Lightly spray the tops with olive oil.
- Air fry at 350°F for 15 minutes, flipping after 8 minutes.
Notes
Ensure chickpeas are well-dried to prevent wet falafel. Experiment with spices and consider adding a squeeze of lemon juice for zest.
