Preparation
- Ensure your oven is VERY clean to avoid any unwanted smoke.
- Preheat your oven to 450°F (235°C) and place an oven rack at the lowest position.
- Remove and discard the truss that holds the turkey legs together.
- Trim off excess fat in the neck and body cavity and take out the giblets and neck.
- Rinse the turkey inside and out with warm water, then pat it dry with paper towels.
- Set the V-shaped rack in the roasting pan and place the turkey breast-side-up on the rack.
- Rub the turkey skin generously with olive oil, then sprinkle it with kosher salt and black pepper.
- Pull the wings away from the body, firmly twist them, and tuck the tips underneath the bird.
- Cover the drumstick tips with aluminum foil caps.
- Insert the meat thermometer into the thickest part of the breast.
Roasting
- Roast the turkey in the oven until the thermometer reads 160°F (71°C), typically 1 to 1½ hours.
- Rotate the pan halfway through to ensure even browning.
- If the kitchen gets too smoky, pour a cup of tepid water into the roasting pan to create steam.
Resting and Gravy Preparation
- Once the turkey reaches 160°F, remove the pan from the oven and let the juices flow into the pan.
- Transfer the turkey to a platter or cutting board, cover it with foil, and let it rest for 20 to 30 minutes.
- Place the roasting pan on a stove burner, skim off excess fat, and add the chicken broth.
- Cook over medium heat, scraping the bottom of the pan until it simmers.
- In a medium saucepan, melt the butter over medium-low heat and add the chopped onions.
- Cook until translucent, about 15 minutes, then whisk in the flour.
- Gradually add the broth mixture and Cognac, cooking until thickened.
- If using, stir in the heavy cream and herbs, adjusting seasoning as needed.
- Transfer the gravy to a bowl once it's rich and velvety.
Serving
- Carve your turkey and serve it with the gravy on the side.
Notes
Using fresh herbs will elevate the taste. Investing in a leave-in thermometer ensures perfect doneness.
