Method
Cooking
- Start by bringing a large pot of water to a boil over medium heat. Add your pasta and cook according to package directions until al dente.
- Once cooked, drain the pasta and immediately run cold water over it to stop the cooking process. Set aside to cool completely.
- In a medium to large frying pan, add a dash of olive oil (or butter) and roast your corn over medium-high heat, stirring frequently until lightly browned, about 5 minutes.
- Transfer the roasted corn into a bowl and place it in the freezer for a few minutes to cool quickly.
- While the corn cools, dice your red onion, seed and dice your jalapeño, and roughly chop your fresh cilantro.
- In a large bowl, mix your cooled pasta, red onion, jalapeño, cilantro, cojita cheese, and roasted corn.
Dressing Preparation
- In another bowl, prepare your dressing by combining sour cream, mayo, lime juice, chili powder, cumin, and garlic powder. Add salt and pepper to taste.
- Pour the dressing over the pasta mixture, tossing gently to combine all ingredients thoroughly.
- Top with additional cilantro and cojita cheese for presentation before serving.
Serving
- Serve immediately or let it chill in the fridge to allow flavors to meld.
Notes
Always taste the dressing before mixing it into the pasta salad. Adjust lime juice, salt, or spice levels according to your preference. This salad can be made a day in advance, but be cautious with ingredients like cilantro that may wilt over time.
