Ingredients

Main Ingredients
  • 12 pieces chicken wings (combination of drumettes and wingettes, not whole wings) Provides a perfect mix of juicy meat and crispy skin.
  • 1/2 tsp kosher salt (plus more to taste) Enhances the natural flavors of the chicken.
  • 1 Tbsp chili powder Adds warmth and depth to the wings.
  • 1 tsp granulated garlic For a subtle garlic kick.
  • 1/2 Tbsp baking powder Not baking soda; crucial for achieving crispiness.

Method

Preparation
  1. Start by drying the chicken wings thoroughly with paper towels.
  2. Place the dried wings into a medium bowl.
  3. Sprinkle in the kosher salt, chili powder, granulated garlic, and baking powder. Using your hands, rub the seasoning all over the wings.
  4. Set the seasoned wings aside to allow the flavors to meld.
Cooking
  1. Lightly grease the cooking rack of your air fryer with cooking oil.
  2. Arrange the wings on the rack, ensuring there’s space between them for optimal air circulation.
  3. Insert the rack with the wings into the air fryer and set the temperature to 410°F. Cook for 20 minutes, adjusting to 22 minutes if your air fryer maxes out at 400°F.
  4. For extra crispy wings, consider adding an additional 5 minutes to your cooking time.
  5. Check for doneness. The wings should be golden brown.
  6. If needed, cook for an additional 3-5 minutes, checking frequently.
  7. Carefully remove the crispy wings from the air fryer and transfer them to a serving plate.
  8. If tossing in sauce, let them sit for 5 minutes to help retain their crispiness.

Notes

Allow the wings to marinate in the seasoning for at least an hour before cooking. Experiment with different spices or add brown sugar for a touch of sweetness. For multi-flavored wings, cook separately and toss in different sauces after cooking.
