Ingredients

For the Strawberries
  • 3 cups fresh ripe strawberries (hulled & diced) The star ingredient, bursting with flavor.
  • ½ to ¾ cup granulated sugar To sweeten the strawberries.
For the Batter
  • 1 cup all-purpose flour For a fluffy and tender cobbler.
  • 2 teaspoons baking powder Essential for a light and airy texture.
  • ½ teaspoon sea salt Balances the sweetness.
  • ½ cup granulated sugar For the batter.
  • 1 cup whole milk (warm, almond milk works too) Adds moisture to the batter.
  • ½ teaspoon vanilla extract Infuses the cobbler with flavor.
  • 8 tablespoons unsalted butter (melted) Contributes richness.

Method

Preparation
  1. Preheat your oven to 375°F. Grease a 1.8-liter casserole dish and set it aside.
  2. In a medium bowl, combine the hulled and diced strawberries with ½ to ¾ cup of sugar. Toss gently until syrupy, then set aside.
Make the Batter
  1. In a large mixing bowl, whisk together 1 cup of flour, 2 teaspoons of baking powder, ½ teaspoon of sea salt, and ½ cup of sugar.
  2. Add 1 cup of warm milk, ½ teaspoon of vanilla extract, and 8 tablespoons of melted butter. Stir gently until just combined. A few lumps are okay.
Assemble and Bake
  1. Pour the batter evenly into the greased baking dish. Distribute the syrupy strawberries on top without stirring.
  2. Bake for 35-40 minutes or until golden brown on top.
  3. Let it rest for a few minutes before serving. For extra indulgence, serve with vanilla ice cream.

Notes

Select ripe strawberries for the best flavor and consider adding a pinch of cinnamon to the batter for extra flavor. The cobbler should come out clean when tested with a toothpick.
