Ingredients

Main Ingredients
  • 2 pounds all-purpose flour Approximately 6 2/3 cups
  • 1 tablespoon baking powder Helps the gorditas rise slightly
  • 1 teaspoon salt Essential for flavor enhancement
  • ½ cup lard Adds richness and flavor
  • 1 cup water Essential for binding the ingredients
  • 1 cup milk Adds creaminess and flavor

Method

Preparation
  1. Prepare the cooking surface by placing a comal (griddle or cast-iron skillet) over medium heat.
  2. In a large bowl, mix together the flour, baking powder, and salt.
  3. Incorporate the lard into the dry ingredients, mixing until the mixture resembles small crumbs.
  4. In a small pot, warm the water and milk together without boiling.
  5. Combine the warm liquid with the flour mixture and mix using your hands until the dough comes together.
  6. Knead the dough on a clean surface until pliable and springy, adding flour if it's too sticky.
  7. Divide the dough and roll it into 2 to 2½-inch balls.
  8. Flatten each ball into 5 to 6-inch disks using a rolling pin.
  9. Cook each disk on the heated comal for about one minute on each side until golden brown.
  10. Cut a pocket around the edge of the cooked gorditas once they can be handled.
  11. Keep the gorditas warm in a tortilla warmer or under a dish towel.
Serving
  1. Fill the gorditas with your choice of savory or sweet fillings.

Notes

Allow the dough to rest for 10-15 minutes before rolling for better texture. Maintain consistent heat on the comal to avoid undercooking or burning.
