Method

Preparation
  1. Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper or foil and spray it lightly with cooking oil.
  2. In a large bowl, whisk together the panko breadcrumbs, chopped parsley, grated onion, garlic, lemon zest, lemon juice, egg, and spices along with crumbled feta cheese.
  3. Add the ground beef to the mixture and gently combine using your hands until just mixed, being careful not to overwork the meat.
  4. Form approximately tablespoon-sized meatballs and place them on the prepared baking sheet. Spray or brush the tops lightly with olive oil.
Cooking
  1. Bake the meatballs in the center rack of the oven for approximately 10-12 minutes, or until they are golden brown and cooked through.
  2. While the meatballs are baking, prepare the tzatziki sauce by combining shredded cucumber, Greek yogurt, lemon juice, dill, grated garlic, salt, and pepper in a medium-sized bowl. Stir until well incorporated.
  3. Remove the meatballs from the oven and let them cool slightly before serving hot with the tzatziki sauce on the side for dipping.

Notes

For extra flavor, add a dash of cayenne pepper to the meatball mixture. Refrigerate the mixture for 30 minutes before forming for firmer meatballs. Experiment with spices for a bolder flavor.
