  • 1 tablespoon lime zest From about 2 limes; infuses the dish with bright, citrus notes.
  • 4 cloves garlic, minced Offers an aromatic punch that enhances the overall taste.
  • 1.25 teaspoons ground ancho chile powder Adds a touch of smokiness for depth.
  • 0.5 teaspoon ground coriander Provides a hint of earthiness.
  • 0.25 teaspoon dried oregano Brings an herby touch to the mix.
  • 1.25 teaspoons salt Enhances all flavors.
  • 0.5 teaspoon freshly ground black pepper For a subtle kick.
  • 2 teaspoons honey Balances the tanginess of the lime.
Chicken
  • 4 pieces boneless skinless chicken breasts About 2 lbs, pounded to an even ½-in thickness.
For serving
  • 1 piece lime Sliced into wedges for serving (optional).

Method

Preparation
  1. Combine all the marinade ingredients except for the chicken breasts in a 1-gallon freezer bag.
  2. Close the bag securely and squish the marinade around until all ingredients are well mixed.
  3. Add the chicken breasts to the bag and massage the marinade into the meat to ensure even coating.
  4. Seal the bag tightly and place it in a bowl in your refrigerator to marinate for at least 6 hours or overnight for best results.
Cooking
  1. Clean your grill thoroughly and preheat it to high.
  2. Using tongs, dip a wad of paper towels in vegetable oil and rub it over the grates several times until glossy.
  3. Place the marinated chicken breasts on the grill and spoon any remaining marinade from the bag over the top.
  4. Grill the chicken, covered, for 2 to 3 minutes per side, turning only once.
  5. Once cooked through, serve immediately with lime wedges.

Notes

For optimal results, marinate your chicken overnight. You can substitute ancho chile powder with regular chili powder. If grilling isn’t an option, this recipe works well in a broiler or on a stovetop grill pan.
