  • zesty salsa macha For an extra kick.
  • diced fresh or roasted jalapeño Add for spiciness.
  • toasted and crushed chiles Jalapeño de arbol, costeño, or puya.

Method

Preparation
  1. Pour the gallon of whole milk into two large, heavy pots, dividing it evenly.
  2. Heat the milk over medium heat while stirring gently to avoid scorching.
  3. Using an instant-read thermometer, monitor the milk's temperature closely, aiming for a range between 165-180 degrees F.
Curdling
  1. Once the milk reaches the desired temperature, gradually add 1/3 cup of vinegar or lemon juice to each pot, stirring gently.
  2. Be patient and add just 1 tablespoon at a time. You'll notice the curds beginning to separate from the whey.
  3. After the curds have fully formed, remove the pots from heat and allow to rest for 30 minutes.
Draining
  1. Line a colander with four layers of cheesecloth, ensuring it hangs over the sides.
  2. Carefully pour the curdled mixture into the lined colander placed in the sink and let it drain for about 20 minutes.
Final Preparation
  1. Gather the cheesecloth and twist it to remove any remaining moisture.
  2. Transfer the cheese to a mixing bowl and season with salt to taste.
  3. Knead the cheese for a few minutes to distribute salt evenly.
  4. Incorporate any optional flavorings if desired, then press the cheese down firmly into an even compact layer.
  5. Cover the bowl with plastic wrap and chill it in the refrigerator overnight.
Serving
  1. The next day, loosen the edges with a knife or spatula, and flip it onto a serving plate.
  2. Slice or crumble as desired and enjoy your homemade queso fresco.

Notes

For best results, ensure the milk is fresh and not ultra-pasteurized. Don't rush the curdling process, and feel free to experiment with different herbs and spices.
