Method

Preparation
  1. In a bowl, combine the garlic powder, onion powder, paprika, salt, black pepper, and olive oil. Mix well until it forms a wet paste.
  2. Pat the turkey breast dry with paper towels. Generously slather the rub all over the turkey.
Cooking
  1. In the slow cooker, place the halved garlic, onion, and thyme face down.
  2. Set the turkey breast on top and cover. Cook on LOW for about 6 hours, or until the internal temperature registers 165°F/75°C.
  3. Once cooked, carefully remove the turkey and let it rest for about 20 minutes.
  4. Preheat your oven's broiler to high. Transfer the turkey to a heatproof dish and broil for 3 to 5 minutes until the skin is golden and crispy.
Making Gravy
  1. Strain the cooking liquid into a measuring jug, pressing garlic and onion to extract extra flavor.
  2. In a saucepan, melt the butter over medium heat and stir in the flour to form a paste. Gradually add the strained liquid, whisking until smooth.
  3. Simmer until it thickens slightly; season to taste with salt and pepper.
Serving
  1. Slice the turkey and serve it warm with gravy on the side.

Notes

For added flavor, consider marinating the turkey overnight with the rub before cooking. Any leftover turkey can be shredded for sandwiches, soups, or salads.
