Method

Make the Cake
  1. Preheat your oven to 350 degrees F.
  2. In a bowl of a standing mixer fitted with a paddle attachment, combine the granulated sugar, unsalted butter, and kosher salt. Mix on medium-high speed for about 2 minutes, or until light and fluffy.
  3. Add large eggs one at a time, mixing thoroughly after each addition.
  4. Mix in the baking powder and vanilla extract until well combined.
  5. In a liquid measuring cup, stir together the milk and heavy cream.
  6. With the mixer set on low speed, add the flour alternately with the milk mixture, starting and ending with flour. Mix just until combined.
  7. Stir in the grated lemon zest and lemon juice.
  8. Generously spray a 10-cup bundt pan with nonstick baking spray.
  9. Pour the batter into the prepared bundt pan and smooth the top.
  10. Bake for 60 to 70 minutes. Check for doneness with a toothpick; it should come out clean or with a few moist crumbs.
  11. Once baked, cool the cake on a wire rack for 5 to 10 minutes before turning it out and letting it cool completely.
Just Before Serving, Make the Icing
  1. In a small bowl, whisk together the powdered sugar, heavy cream, fresh lemon juice, and vanilla extract. Adjust consistency with additional cream as needed.
  2. Once the cake is completely cool, pour the icing over the top.

Notes

Ensure all ingredients are at room temperature for better mixing. Fresh lemons provide the best flavor.
