Ingredients

For the Marinade
  • 6-8 pieces boneless skinless chicken thighs Tender and juicy, perfect for marinating.
  • 1/4 cup extra virgin olive oil Adds a smooth, buttery texture.
  • 2 cloves garlic (crushed) Infuses warmth into the chicken.
  • 1 tsp black pepper Adds a subtle kick.
  • 1/2 tsp salt Enhances all flavors.
  • 1 tsp lemon zest Adds freshness.
  • 2 tbsp lemon juice Tenderizes the meat.
  • 2 tsp dried thyme (or 2 tbsp finely chopped fresh thyme) Lends an earthy tone.
  • 1 tsp dried rosemary (or 1 tbsp finely chopped fresh rosemary) Brings a woodsy aroma.

Method

Preparation
  1. In a large zip loc bag, combine the chicken thighs with all the marinade ingredients: olive oil, crushed garlic, black pepper, salt, lemon zest, lemon juice, thyme, and rosemary. Seal the bag and shake gently to ensure every piece is well coated.
Marination
  1. Let the chicken rest in the marinade in the refrigerator for at least 20 minutes, ideally overnight for a more intense flavor.
Grilling
  1. Preheat your grill to medium heat for even cooking.
  2. Place the marinated chicken thighs on the grill and cook for about 4-6 minutes on each side, flipping only once if possible. Ensure they reach an internal temperature of 165°F.
  3. Let the chicken rest for a few minutes before serving to allow juices to redistribute.

Notes

For best results, consider marinating for longer. Use a meat thermometer for perfect doneness, and feel free to swap out herbs based on availability.
