Preparation
- Preheat a grill to medium-high heat or place a grill pan on the stove.
- In a mixing bowl, combine the ground chicken, grated onion, cumin, smoked paprika, minced garlic, egg, almond flour, salt, lime juice and zest, diced jalapeño, and chopped cilantro. Mix until evenly distributed.
- Form the mixture into four patties, approximately ½ inch thick.
- For the pico de gallo, combine chopped tomatoes, finely chopped onion, cilantro, diced jalapeño, and lime juice in a bowl. Stir well and sprinkle salt to taste.
- Mash the avocado with a fork until it reaches a chunky consistency.
- For the chipotle mayo, mix mayonnaise, chipotle sauce, lime juice, and a pinch of salt in another bowl.
Grilling
- Grill the patties for about 5-7 minutes per side, or until they are thoroughly cooked to an internal temperature of 165°F (75°C).
Assembly
- Assemble the burgers by placing a leaf of romaine lettuce on the bottom bun, followed by the grilled patty, a generous spoonful of chipotle mayo, a layer of mashed avocado, and a scoop of pico de gallo. Top with the upper bun.
Notes
To enhance flavor, marinate the chicken mixture for at least 30 minutes before forming patties. Toast buns on the grill for extra crispness.
