Ingredients

Main Ingredients
  • 2 cans solid white albacore tuna in water (drained)
  • 1 can black beans (drained & rinsed)
  • ¾ cup frozen corn (or canned corn, drained & rinsed)
  • ¼ cup red bell pepper (diced)
  • ¼ cup red onion (diced)
  • ¼ cup fresh cilantro (chopped)
  • ¼ cup light mayo (full fat works fine)
  • ⅓ cup plain Greek yogurt (0% fat)
  • 1 small lime (juiced)
  • 7 teaspoons Siete brand taco seasonings

Method

Preparation
  1. Open the cans of tuna and drain the packing liquid. Pour the tuna into a mixing bowl and use a fork to flake apart any large chunks until the texture is relatively uniform.
  2. Add the drained and rinsed black beans and the frozen corn directly to the bowl.
  3. Chop the red bell pepper, red onion, and cilantro into small pieces and add them to the mixing bowl.
  4. Combine the flaked tuna and chopped veggies in the bowl, stirring until everything is well incorporated.
  5. Add light mayo and Greek yogurt atop the mixture, then squeeze the juice of one lime into the bowl.
  6. Mix well until all ingredients are coated with the creamy dressing.
  7. Sprinkle the taco seasonings over the top and stir again until evenly distributed.

Notes

This salad can be served in various ways: enjoy it straight, in whole-grain tortillas, as a dip with corn chips, or atop tostada shells.
