Method
Make the Lemon Pound Cake
- Preheat your oven to 325 degrees F and spray a loaf pan with nonstick baking spray.
- Sift the all-purpose flour, cornstarch, baking soda, and kosher salt together on wax paper two times.
- Beat the unsalted butter and cream cheese in a stand mixer on medium speed for about 30 seconds.
- Gradually add the granulated sugar and beat for about 5 minutes until light and fluffy.
- Add the eggs one at a time, mixing until just combined after each addition.
- Incorporate the lemon zest, lemon juice, vanilla extract, and lemon extract, beating until combined.
- Reduce mixer speed to low and gradually incorporate the sifted flour mixture in three additions until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 70 to 75 minutes until a toothpick inserted in the center comes out clean.
- Cool on a wire rack for about 15 minutes before removing from the pan.
Make the Raspberry Compote
- Combine fresh raspberries, sugar, and water in a medium saucepan.
- Cook over medium heat for about 14 to 16 minutes, stirring occasionally, until the mixture reaches a jam-like consistency.
Notes
Ensure ingredients are at room temperature for a smoother batter. Add more lemon zest for extra flavor or substitute other berries for the compote.
