  • 1 teaspoon ginger (minced) Adds warmth and spice.
  • 2 tablespoons garlic (chopped) Provides an aromatic foundation.
  • 1 cup regular soy sauce The backbone of the dish, bringing depth and umami.
  • 1 cup water Helps balance the sauce.
  • 1.5 cups dark brown sugar (tightly packed) Offers a sweet, rich contrast.
For the Beef
  • 2 pounds flank steak The star ingredient, juicy and full of flavor.
  • ½ cup cornstarch Ensures the beef is crispy on the outside.
  • ½ teaspoon table salt Enhances all the flavors.
  • 1 bunch green onions (sliced into 1-inch pieces) Freshness and crunch to finish.
  • 2-3 pieces dried chilies (optional) Adds a hint of heat for those who like it spicy.
For Frying
  • 1 cup vegetable oil For frying the beef to crispy perfection.

Method

Make the Sauce
  1. In a saucepan over medium-low heat, heat 4 teaspoons of vegetable oil until hot but not smoking. Add minced ginger and chopped garlic, stirring for about 30 seconds until fragrant.
  2. Pour in soy sauce and water, then stir. Add brown sugar and mix well before bringing to a gentle boil for 2-3 minutes.
  3. Remove from heat once the sauce thickens slightly and set aside.
Prepare the Beef
  1. Slice the flank steak against the grain into ¼ inch thick pieces at a 45-degree angle.
  2. Toss the steak pieces in a large bowl with ½ cup cornstarch, ensuring each piece is generously coated. Let rest for 20 minutes.
  3. Sprinkle the coated beef with ½ teaspoon salt and toss for an even coat.
Fry the Beef
  1. In a large wok or skillet, heat 1 cup of oil over medium heat until hot but not smoking. Add the beef, ensuring not to overcrowd.
  2. Stir frequently for about 2-3 minutes until browned. Remove with a slotted spoon to a paper towel-lined plate to catch excess oil. Carefully pour remaining oil out.
Combine and Serve
  1. Return the beef to the empty pan, stir over medium-low heat for one minute. Add dried chilies if desired.
  2. Pour in the prepared sauce and cook for one minute, stirring constantly. Add green onions and cook for an additional minute until beef is cooked through and onions are wilted.
  3. Serve immediately over warm rice.

Notes

For an extra layer of flavor, marinate the beef overnight in soy sauce and ginger. Adjust the sweetness by modifying the amount of brown sugar based on preference. Leftovers can be stored in the refrigerator for up to 3 days.
