Ingredients

For the chicken marinade
  • 750 g boneless skinless chicken thigh fillets about 6 tender fillets
  • 0.5 tsp thyme dried for an earthy flavor
  • 0.5 tsp rosemary dried, adding a hint of pine aroma
  • 1 tsp garlic powder for subtle warmth
  • 1 tsp onion powder to enhance flavor depth
  • 0.5 tsp cracked pepper to add a mild kick
  • 1 tsp salt to bring out all the flavors
  • 4 tbsp olive oil for rich cooking
For the sauce
  • 30 g salted butter for creaminess
  • 4 cloves garlic roughly chopped, for a robust aroma
  • 250 g button mushrooms sliced; small-sized for quick cooking
  • 1 cup chicken stock for a savory base
  • 1 cup heavy cream to create that luscious sauce
  • 0.5 cup shredded parmesan cheese for a cheesy finish

Method

Preparation
  1. Pat down the chicken thighs with a paper towel to remove excess moisture.
  2. Combine the dried rosemary, thyme, garlic powder, onion powder, salt, and cracked pepper in a bowl.
  3. Coat each chicken thigh generously on both sides with the seasoning mix, pressing gently onto the meat.
Cooking
  1. Heat 4 tablespoons of olive oil in a large frying pan over high heat.
  2. Cook the chicken thighs in batches to avoid overcrowding, about 5 to 8 minutes per side until golden brown.
  3. Remove the chicken from the pan and set aside.
  4. Add butter to the same pan, then toss in the chopped garlic, cooking for about one minute.
  5. Add sliced mushrooms and cook until brown and slightly shrunk.
  6. Pour in the chicken stock and simmer for about 30 seconds.
  7. Lower the heat and stir in the heavy cream and shredded parmesan cheese until melted and creamy.
  8. Return the chicken thighs to the pan and simmer until heated through, about 5 to 10 minutes.
  9. Adjust seasoning with salt and pepper to taste and garnish with parsley or chives.

Notes

For best results, marinate the chicken before cooking. Use fresh herbs for enhanced flavor and feel free to add extra vegetables.
