  • 1/2 tsp black pepper for a hint of spice
  • 1/4 tsp chili flakes bringing just the right amount of heat
  • Fresh parsley Fresh parsley, chopped to top, providing a fresh finish

Method

Preparation
  1. Combine the salmon seasonings: paprika, dry parsley, garlic powder, smoked paprika, salt, and pepper. Rub the spice mix evenly over each salmon fillet.
Searing the Salmon
  1. Heat a large skillet over medium heat and add the olive oil. Sear the salmon fillets for about 3-4 minutes on each side until browned. Remove the salmon and set aside.
Cooking the Orzo
  1. In the same pan, add the butter, once melted, toss in the shallots and crushed garlic. Sauté for about 2 minutes until translucent.
  2. Add the dry orzo, salt, pepper, chili flakes, and lemon zest, and toss to combine.
  3. Pour in the vegetable broth, coconut milk, kale, and frozen peas. Cover the pan and bring to a boil. Reduce heat and let simmer for 10-12 minutes, stirring occasionally.
Finishing Touches
  1. Adjust seasoning if needed. Drizzle in the lemon juice, stir well, and add back the salmon fillets. Cover and finish cooking for another 5-6 minutes.
  2. Garnish with chopped parsley and an additional squeeze of lemon juice before serving.

Notes

For extra flavor, consider marinating the salmon for about 30 minutes before cooking. You can substitute the kale with spinach or Swiss chard. For creamier orzo, adjust the coconut milk to your preference.
