Ingredients

For the tart
  • 1 sheet frozen puff pastry (thawed according to package directions) Keep pastry cold until ready to use for a flaky finish.
  • 2 tbsp all-purpose flour For dusting the work surface.
  • 1 large egg Beaten with 1 tbsp water for egg wash.
  • 2 small pears (thinly sliced) Opt for firm pears like Bartlett or Anjou.
  • ½ cup caramelized onions Ensure adequately caramelized for sweet flavor.
  • ½ cup walnut halves and pieces Provides a delightful crunch.
  • ¼ cup Gorgonzola or other blue cheese Substitute with feta or goat cheese for milder flavor.
  • 3 tbsp honey For drizzling on the tart before serving.

Method

Preparation
  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or a silicone baking liner.
  2. Dust your working surface with all-purpose flour, then roll out the thawed sheet of puff pastry into a rectangle, approximately 10×15 inches.
  3. Fold in the edges of the pastry by ½ inch to form a border and crimp the edges if desired.
  4. Pierce the inner section of the pastry all over with a fork to ensure even cooking.
  5. Brush the entire inner portion and the edges of the puff pastry with the beaten egg wash.
Assembly
  1. Layer the thinly sliced pears in a single layer over the pastry.
  2. Evenly distribute the caramelized onions between and over the pears, then sprinkle with walnut halves and pieces, followed by the crumbled blue cheese.
Baking
  1. Place the prepared tart into the preheated oven and bake for about 25 minutes, or until the pastry has puffed and turned a beautiful golden brown.
  2. Once baked, drizzle the warm tart with honey and serve immediately.

Notes

Store the tart covered in the refrigerator for up to 2 days. Can also be frozen before baking and baked from frozen for about 30-35 minutes. Consider adding fresh herbs or experimenting with different nuts.
