Preparation
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix the ground cardamom, sumac, and 1 teaspoon of salt.
- Rub the spice mixture under the skin of each chicken piece and sprinkle the remaining salt on top.
Cooking
- Heat a cast-iron pan or skillet over high heat and add the olive oil.
- Sear the chicken skin-side down for about 5 minutes per side until golden brown.
- Remove chicken from the pan, lower the heat, and add red pepper flakes, pomegranate molasses, thyme bundle, and chicken stock. Bring to a boil and reduce by half.
- Return the chicken to the pan, coating it in the sauce, and roast in the preheated oven for 15-18 minutes until reaching an internal temperature of 165°F (75°C).
- Drizzle the reduced pomegranate sauce over the cooked chicken, then sprinkle with fresh pomegranate seeds and chives.
Notes
For chicken variations, you can use skinless, boneless pieces or substitute with eggplant or mushrooms for a vegetarian option. Marinating the chicken for extra flavor is also recommended.
