Ingredients

Marinade Ingredients
  • 1/3 cup soy sauce Can substitute with Tamari for gluten-free.
  • 1/4 cup extra virgin olive oil Provides moisture and richness.
  • 2 tablespoons garlic, minced Adds aromatic zest.
  • 1 teaspoon garlic powder Enhances garlicky flavor.
  • 1 teaspoon onion powder Adds savory depth.
  • 1 teaspoon lemon zest Balances richness and adds freshness.
  • 2 tablespoons ketchup Brings sweetness and tang.
  • 1/4 cup apple cider vinegar Adds tanginess and tenderizes meat.
  • 1 pinch kosher salt Enhances overall taste.
  • 1 pinch ground black pepper Adds warmth.

Method

Preparation
  1. In a medium-sized bowl, add all the marinade ingredients. Using a whisk, mix them thoroughly until well combined.
  2. Pat the ribs dry with a clean paper towel to help the marinade adhere better.
  3. Gently lift one corner of the membrane on the ribs and pull it off to ensure better marinade absorption.
Marination
  1. Transfer the ribs into a 9x13 baking dish. Pour the marinade over the ribs, ensuring it covers the meat completely.
  2. Rub the marinade into the ribs with your hands, allowing the flavors to penetrate.
  3. Cover the dish with plastic wrap and refrigerate for at least 30 to 60 minutes, or longer for optimal flavor.
Cooking
  1. After marinating, remove the ribs from the marinade (discarding any excess). Cook using your preferred method: grilling, baking, or smoking.

Notes

For maximum flavor, marinate overnight. Removing the membrane is important for flavor absorption. Maintain low heat when grilling to avoid burning the ribs.
