Ingredients

Main Ingredients
  • 1 small small sugar pumpkin (approximately 3 lbs) This pumpkin is sweet and creamy.
  • 1/3 cup melted ghee or butter Coconut oil can be used for a vegan option.
  • 2 tablespoons honey Maple syrup can be used if vegan.
  • 1/2 teaspoon cinnamon A warm and aromatic spice.
  • 1/2 teaspoon thyme A fragrant herb.
  • 1/3 teaspoon salt Enhances the natural flavors.
  • 1/4 teaspoon pepper Adds a subtle kick.
  • 1/4 teaspoon chili powder Adds a hint of spice.
  • 1/8 teaspoon nutmeg Pairs well with pumpkin.
  • 1/3 cup chopped pecans Provides a crunchy texture.

Method

Preparing the Pumpkin
  1. Preheat your oven to 350º Fahrenheit (175º Celsius).
  2. Cut the pumpkin in half lengthwise. Remove the stem and scoop out the seeds and stringy insides.
  3. Chop the pumpkin halves into large wedges, about 3-4 inches in size.
  4. Place the pumpkin wedges in a large baking dish.
Making the Flavorful Sauce
  1. In a saucepan over medium heat, melt the ghee or butter until bubbly but not browned.
  2. Stir in the honey, cinnamon, thyme, salt, pepper, chili powder, and nutmeg. Let it bubble gently.
  3. Toss in the chopped pecans and let simmer for an additional 2 minutes.
Baking the Pumpkin
  1. Carefully spoon the sauce over each pumpkin wedge, ensuring they are well coated.
  2. Transfer the baking dish to the preheated oven and bake for about 30 minutes, until the wedges are tender.
  3. Once done, spoon any excess sauce over the wedges and garnish with fresh thyme sprigs.

Notes

Choose the right pumpkin for sweetness. Adjust the sweetness by reducing honey or maple syrup. Mix in some crispy bacon bits for a savory twist if not vegan.
