Preparation
- Add your saffron to a small bowl and pour over the boiling water. Let it sit for 15-20 minutes to bloom.
- Finely dice the onion and garlic cloves. Slice the red chili and red bell pepper into bite-sized pieces. Roughly chop the parsley.
Cooking
- Heat a drizzle of extra virgin olive oil in a pan over medium heat. Add the diced onions and cook until golden and caramelized.
- Incorporate the chopped garlic, red chili, and red pepper into the pan and sauté for two minutes.
- Sprinkle in the smoked paprika and cook for 30 seconds until fragrant.
- Add the drained chickpeas and lemon zest. Pour in the saffron-infused stock and stir. Simmer for five minutes.
- Taste for seasoning, then fold in the frozen prawns and cook for three minutes until fully cooked.
- Squeeze a fresh lemon over the stew, sprinkle with parsley, and serve.
Notes
For an extra punch of flavor, use broth instead of water when preparing the saffron stock. Variations include substituting prawns with chicken or tofu and adding other vegetables.
