Main Ingredients
  • 1 pound ground Italian sausage Rich and flavorful for a satisfying depth.
  • 1 whole onion, diced Infuses the broth with an irresistible scent.
  • 3 cloves garlic, minced Enhances the flavor profile.
  • 3 tablespoons all-purpose flour Thickens the soup for a creamy texture.
  • 2 teaspoons Italian seasoning A blend of herbs for an Italian flavor.
  • ¼ teaspoon black pepper Adds just the right amount of bite.
  • 1 pinch red pepper flakes Adds a hint of heat.
  • 5 cups chicken broth The warm, savory base.
  • 2 cups kale, chopped Adds vibrant color and a healthy crunch.
  • 2 cups tortellini (9 oz package) Tender little pasta pillows.
  • 1 cup heavy cream Makes this soup utterly indulgent.
  • Salt to taste Brings together all the flavors.

Method

Preparation
  1. In a large pot over medium-high heat, add the ground Italian sausage and diced onions. Use a wooden spoon to break the sausage apart as it browns. Cook for about 8-10 minutes until the onions are softened and the sausage is cooked through. Drain any excess grease.
  2. Once the sausage and onions are cooked, add the minced garlic and cook for about 1 minute, stirring frequently to avoid burning.
  3. Sprinkle in the flour over the sausage mixture and stir well to coat the meat. Follow with the Italian seasoning, black pepper, and red pepper flakes, stirring to combine flavors effectively.
  4. Pour in the chicken broth while stirring to combine all the ingredients. Bring the pot to a boil, then reduce the heat to a gentle simmer.
  5. Next, incorporate the chopped kale and tortellini into the mix. Allow the soup to simmer for an additional 3-5 minutes or until the tortellini becomes tender and the kale wilts down.
  6. Finally, pour in the heavy cream, stirring until fully combined. Taste the soup and season with salt to your liking.

Notes

For enhanced flavor, use homemade chicken broth. Substitute ground sausage with turkey sausage for a leaner option, or add carrots and bell peppers for variety. Sauté onions and garlic in olive oil before adding the sausage for a richer flavor.
