Method
Boil the Eggs
- Place the eggs in a small pot, fill it with water to cover them completely, and bring to a boil over medium heat.
- Once boiling, turn off the heat, keep the lid on, and let the eggs sit in the hot water for 7-8 minutes.
Cool the Eggs
- Strain the hot water and transfer the eggs to a bowl filled with very cold water, adding ice cubes if possible.
- Let the eggs soak for about 2 minutes to cool down quickly.
- Drain and gently peel the eggs.
Chop the Eggs
- Cut each egg in half lengthwise, remove the yolks from 4 of the eggs, and place them in a shallow bowl.
- Finely chop the remaining two whole eggs and the egg whites, setting aside for later.
Make the Dressing Mixture
- In the bowl with the egg yolks, mix 2 tablespoons of cottage cheese, mayonnaise, and mustard using a fork to mash until thick and creamy.
Assemble the Salad
- Combine the chopped eggs, remaining cottage cheese, scallions, creamy dressing, salt, and pepper in a mixing bowl.
- Gently stir until all ingredients are thoroughly combined. Taste and adjust seasoning if needed.
- Garnish with leftover red pepper flakes and refrigerate for about 30 minutes before serving.
Notes
Consider adding fresh herbs like dill or parsley for extra flavor. Substitute Greek yogurt for mayonnaise for a lighter option, or add diced celery for crunch.
