Preparation
- Preheat the oven to 450ºF, placing a rack in the center.
- Remove the giblets from the chicken and trim any excess fat. Rinse the chicken and dry it thoroughly.
- In a small saucepan over medium-low heat, melt the butter. Once melted, remove from heat and mix in garlic and rosemary. Let sit for 5 minutes.
Stuffing and Roasting
- Stuff the chicken's cavity with garlic and rosemary. Brush melted butter all over the chicken and season with salt and pepper. Place lemon halves inside the cavity.
- Tie the chicken legs together with kitchen string.
- Roast the chicken in the oven for about 1 hour, basting every 15 minutes with the juices.
- Check the internal temperature at the breast; it should reach 165ºF.
Resting and Serving
- Remove the chicken from the oven and transfer it to a cutting board. Let it rest for 10 minutes before slicing.
Notes
Use a meat thermometer to check the internal temperature. Season generously with salt and pepper for enhanced flavor. Allowing the chicken to rest ensures juicy slices.
