Ingredients

Main Ingredients
  • 1 whole (4- to 5-pound) chicken A plump, fresh chicken that promises succulent meat and crispy skin.
  • 4 Tablespoons unsalted butter Rich and creamy butter that adds luscious flavor.
  • 4 large cloves garlic, peeled Aromatic garlic that permeates the meat.
  • 3 sprigs fresh rosemary Fragrant rosemary that elevates the taste.
  • 1 whole lemon, halved Zesty lemon that adds brightness.
  • 1 piece Kitchen string For tying the chicken legs.

Method

Preparation
  1. Preheat the oven to 450ºF, placing a rack in the center.
  2. Remove the giblets from the chicken and trim any excess fat. Rinse the chicken and dry it thoroughly.
  3. In a small saucepan over medium-low heat, melt the butter. Once melted, remove from heat and mix in garlic and rosemary. Let sit for 5 minutes.
Stuffing and Roasting
  1. Stuff the chicken's cavity with garlic and rosemary. Brush melted butter all over the chicken and season with salt and pepper. Place lemon halves inside the cavity.
  2. Tie the chicken legs together with kitchen string.
  3. Roast the chicken in the oven for about 1 hour, basting every 15 minutes with the juices.
  4. Check the internal temperature at the breast; it should reach 165ºF.
Resting and Serving
  1. Remove the chicken from the oven and transfer it to a cutting board. Let it rest for 10 minutes before slicing.

Notes

Use a meat thermometer to check the internal temperature. Season generously with salt and pepper for enhanced flavor. Allowing the chicken to rest ensures juicy slices.
