Method

Preparation
  1. Preheat your oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
  3. In a separate bowl, whisk together the vegetable oil, brown sugar, eggs, applesauce, and vanilla extract until thoroughly combined. Fold in the shredded carrots.
  4. Pour the wet mixture into the dry ingredients and gently fold together using a spatula or whisk until just combined, being careful not to overmix.
  5. Spoon the batter into the cupcake liners, filling each about 3/4 full.
Baking
  1. Bake for 21–23 minutes, checking for doneness with a toothpick.
  2. Let the cupcakes cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Frosting
  1. Beat the softened cream cheese and butter together until smooth. Gradually add in the confectioners' sugar, vanilla extract, and salt; beat until light and fluffy.
  2. Refrigerate the frosting until the cupcakes are completely cooled.
  3. Frost the cool cupcakes with the prepared frosting using a piping bag or spatula.
  4. Garnish with white chocolate carrot toppers or sprinkle with finely chopped walnuts or pecans if desired.

Notes

For extra moisture, consider adding crushed pineapple to the batter. Omit walnuts or pecans for a nut-free cupcake. Ensure ingredients are at room temperature for best results.
