Method

Preparation
  1. Begin by placing the chicken breasts into the slow cooker. Pour in the chicken broth and sprinkle the herb & garlic seasoning and salt over the top.
Cooking the Chicken
  1. Next, place the cream cheese and shredded parmesan on top of the chicken mixture. Cover the slow cooker with its lid and set it to cook on high for 3-4 hours or low for 6-8 hours.
Shredding and Saucing
  1. Once the chicken is fully cooked and tender, remove it from the slow cooker. Use two forks to shred the chicken into bite-sized pieces and set it aside.
  2. In a small bowl, whisk together the cornstarch and water until smooth. Add this mixture to the slow cooker and stir until the cream cheese and parmesan are fully combined and creamy.
Cooking the Pasta
  1. Break your dry noodles in half and add them to the slow cooker. Place the shredded chicken on top and cover the slow cooker. Turn the heat to high and cook for an additional 30-60 minutes, checking and stirring the noodles 3-4 times.
  2. If the noodles are not fully cooked to al dente, add extra chicken broth or water in 1/2 cup increments until fully cooked. Stir everything to combine before serving.

Notes

For a healthier version, substitute half the cream cheese with Greek yogurt. You can also add vegetables like spinach or bell peppers during the last 30 minutes of cooking.
