  • 8 small-to-medium red potatoes Approximately 1 ½ pounds for a hearty texture.
  • 4 to 5 large carrots, cut into 1-inch chunks Sweet and vibrant for crunch and color.
  • ½ head green cabbage, cut into wedges Brings tenderness and freshness to the dish.

Method

Preparation
  1. Remove the corned beef brisket from its packaging and discard the liquid, then take out the seasoning packet.
  2. Place the brisket fat side up in a large (6 qt.) slow cooker and sprinkle the seasoning evenly over the top.
Cooking
  1. Pour the beef broth around the brisket until it reaches just about level with the top of the meat.
  2. Cover the slow cooker and set to cook on high for 3 hours.
  3. After 3 hours, uncover and carefully arrange the red potatoes and carrot chunks around the brisket.
  4. Cover the cooker again and let it cook for an additional 2 hours on high.
  5. Remove the lid and arrange the cabbage wedges on top of the corned beef.
  6. Cover and cook for an additional hour, resulting in a total cooking time of 6 hours.
Serving
  1. After cooking, remove the vegetables from the slow cooker and keep warm.
  2. Transfer the brisket to a cutting board and slice it against the grain.
  3. Serve the corned beef alongside the potatoes, carrots, and cabbage.

Notes

Allow brisket to rest for 10 minutes before slicing. Add peppercorns or hot sauce for extra spice. Substitute beef broth with vegetable broth for a lighter version. Can also adapt to a pressure cooker for short on time.
