Cooking the Pasta
- Boil salted water in a pot. Add the linguine and cook until al dente according to the packet instructions. Drain pasta, reserving 75ml of pasta water for later.
Toasting Pine Nuts
- In a frying pan over high heat, toast pine nuts until golden brown and fragrant. Set aside.
Sautéing Spring Onions
- In the same pan, add butter and sliced spring onions. Fry until soft and aromatic.
Making the Sauce
- Pour olive oil and lemon juice into the pan. Add capers and heat briefly to create a sauce.
Combining Everything
- In a large bowl, combine cooked pasta, reserved pasta water, herbs, and hot-smoked salmon. Season with salt and pepper. Toss gently over low heat.
Serving
- Plate the pasta and garnish with toasted pine nuts. Enjoy hot.
Notes
For perfectly cooked pasta, ensure it's al dente. Experiment with herbs like dill or basil. If hot-smoked salmon is unavailable, cold-smoked salmon can be used.
