Preparation
- Mix together the salt, garlic powder, and black pepper in a small bowl. Sprinkle over the washed and dried chicken wings, massaging the spices into the meat. Set aside.
- In a shallow dish, add the flour and coat each wing generously. Shake off excess flour and let coated wings sit for 15-20 minutes.
- Re-coat wings in flour once more and chill in the refrigerator for at least an hour.
- After an hour, bring wings to room temperature for about 30 minutes before frying.
Make the Sauce
- Melt unsalted butter in a large skillet over medium heat. Stir in honey and hot sauce, bringing it to a light simmer until thickened. Mix in parsley flakes and set aside.
Cooking
- Heat peanut oil to 350°F (175°C).
- Fry wings in batches for 8-10 minutes until golden brown and crispy.
- Transfer cooked wings to a cooling rack to absorb excess oil.
- Toss wings in the spicy honey sauce until well coated.
- Serve on a platter, garnished with fresh parsley and bread and butter pickles on the side.
Notes
Use high-quality chicken wings for the best flavor and texture. For extra heat, add more hot sauce during frying. Chilling the wings helps achieve crispiness.
