Marinate the Shrimp
- In a medium bowl, place the shrimp along with 1 tablespoon of olive oil, cumin, chili powder, paprika, minced garlic, salt, and pepper. Toss gently to coat and let marinate for about 10-15 minutes.
Prepare the Coleslaw

Make the Salsa
- In a separate bowl, combine diced tomatoes, avocado, finely chopped jalapeño, 1/4 cup of roughly chopped cilantro, lime juice, and salt. Stir until well mixed.
Cook the Shrimp
- Heat 1 tablespoon of olive oil in a skillet over high heat. Add the marinated shrimp in a single layer and cook for approximately 2-3 minutes per side until pink and cooked through.
Warm the Tortillas
- Warm the tortillas by placing them over an open flame or using a microwave.
Assemble the Tacos
- Fill each warm tortilla with coleslaw, a spoonful of salsa, and the cooked shrimp. Drizzle with cilantro lime sauce and serve with lime wedges and jalapeños.
