Ingredients

Spices
  • 2 teaspoons chili powder A mild blend that adds a gentle kick without overpowering the dish.
  • 1 teaspoon ground cumin This spice contributes a warm, earthy flavor to the skillet.
  • 3/4 teaspoon garlic powder Adds an aromatic note that beautifully complements the steak.
  • 3/4 teaspoon smoked paprika Infuses a subtle smokiness, enhancing the dish's depth.
  • 2 teaspoons salt Essential for bringing all the flavors together.
  • to taste freshly ground black pepper Provides a hint of heat and complexity.
Main Ingredients
  • 2 tablespoons avocado oil Perfect for sautéing, with a mild, buttery flavor.
  • 1.5 pounds top sirloin steak (cut into 1-inch cubes) Juicy, tender chunks that caramelize beautifully.
  • 1 pound sweet potatoes (peeled and cut into 1/2 inch cubes) Sweet, creamy bites that balance the savory steak.
  • 1 red bell pepper (diced) Adds a pop of color and crisp texture.
  • 2 green onions (sliced thin) For a fresh, crunchy garnish.
  • 2 tablespoons chopped cilantro Brightens the dish with its herbaceous note.
  • 1 lime (juiced) A zesty finish that livens up the entire skillet.

Method

Preparation
  1. Combine the dried spices, salt, and pepper in a small bowl. This mixture will ensure every bite is flavorful.
  2. Place the diced sweet potatoes in a microwave-safe bowl along with a tablespoon of water. Microwave for 2 minutes, stir, then microwave for another 1-2 minutes until they’re soft but not completely cooked.
  3. Toss the sweet potatoes with about a teaspoon of the spice blend until they are well coated.
  4. Heat a large skillet over medium-high heat and add a tablespoon of avocado oil. Once hot, toss in the cubed steak, cooking it for 1-2 minutes on one side before flipping and cooking for another 1-2 minutes. Once browned, remove the steak and set it on a plate.
Cooking
  1. In the same skillet, add the remaining tablespoon of oil. Introduce the diced red bell pepper, sweet potatoes, and sliced green onions, sautéing for 3-4 minutes until the sweet potatoes are tender and the pepper is crisp-tender.
  2. Add the cooked steak back into the skillet along with the chopped cilantro. Stir everything together, then turn off the heat and squeeze in the fresh lime juice. Stir to combine and taste for seasoning.
  3. Garnish with extra green onions and cilantro before serving warm.

Notes

For extra flavor, consider marinating the steak in lime juice, garlic, and spices for about an hour before cooking. You can vary the vegetables based on your taste; zucchini or asparagus can be delicious substitutions.
