Preparation
- Combine the dried spices, salt, and pepper in a small bowl. This mixture will ensure every bite is flavorful.
- Place the diced sweet potatoes in a microwave-safe bowl along with a tablespoon of water. Microwave for 2 minutes, stir, then microwave for another 1-2 minutes until they’re soft but not completely cooked.
- Toss the sweet potatoes with about a teaspoon of the spice blend until they are well coated.
- Heat a large skillet over medium-high heat and add a tablespoon of avocado oil. Once hot, toss in the cubed steak, cooking it for 1-2 minutes on one side before flipping and cooking for another 1-2 minutes. Once browned, remove the steak and set it on a plate.
Cooking
- In the same skillet, add the remaining tablespoon of oil. Introduce the diced red bell pepper, sweet potatoes, and sliced green onions, sautéing for 3-4 minutes until the sweet potatoes are tender and the pepper is crisp-tender.
- Add the cooked steak back into the skillet along with the chopped cilantro. Stir everything together, then turn off the heat and squeeze in the fresh lime juice. Stir to combine and taste for seasoning.
- Garnish with extra green onions and cilantro before serving warm.
Notes
For extra flavor, consider marinating the steak in lime juice, garlic, and spices for about an hour before cooking. You can vary the vegetables based on your taste; zucchini or asparagus can be delicious substitutions.
