  • 1.5 pounds lean ground beef Offers a hearty and protein-rich foundation.
  • 1 packet taco seasoning mix Adds aromatic and spicy flavor.
  • 0.75 cup water Necessary for keeping the filling moist.
  • 1.5 cups cheddar cheese, shredded Contributes a creamy and melty texture.

  • 0.5 cup salsa Offers a burst of freshness and zest.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by spraying with nonstick spray.
  2. Wash the bell peppers thoroughly, slice them in half lengthwise, and remove the seeds and membranes. Place the halved peppers cut-side up in a microwave-safe dish with ¼ cup of water, cover, and microwave for 5 to 6 minutes until softened. Drain excess water.
Cooking

  2. Add the taco seasoning and ¾ cup of water to the skillet with the beef, stir, and simmer until thickened as per packet directions.
  3. Remove from heat and stir in sour cream, salsa, and 1 cup of shredded cheddar cheese until fully combined.
Assembly & Baking
  1. Arrange the softened pepper halves in the baking dish and generously fill each with the beef mixture. Sprinkle the remaining ½ cup of cheddar cheese on top.
  2. Bake for 20 to 30 minutes until the peppers are soft, heated through, and cheese is melted.
  3. Serve warm and top with your favorite taco toppings.

Notes

For added flavor, consider mixing in some black beans or corn to the beef filling. Use a variety of bell pepper colors to brighten the dish and alter flavor profiles.
