Preparation
- If you plan ahead, lay the wings on a rack on a rimmed baking tray and let them dry uncovered in the fridge overnight.
- Start by preheating your oven to 250°F (120°C) with one oven shelf set in the lower quarter and another in the top quarter.
- Line your baking tray with foil for easy cleanup. Place a rack on top of the tray and spray it with oil.
- In a large bowl, combine the chicken wings with baking powder and kosher salt. Toss them thoroughly.
Cooking
- Place the wings skin-side up on the rack and bake on the lower shelf for 30 minutes.
- After 30 minutes, move the tray to the higher shelf and increase the oven temperature to 425°F (220°C). Bake for another 40 to 50 minutes, rotating the tray halfway through.
Tossing and Serving
- Transfer the baked wings to a large bowl and pour over the prepared sauce. Toss to coat evenly.
- In a separate bowl, mash together the blue cheese and sour cream until smooth. Add in the mayonnaise and mix until fully combined. Adjust the consistency with milk if needed.
- Serve the wings hot alongside the creamy blue cheese dip and fresh celery sticks.
Notes
For even crispier wings, let them dry in the fridge overnight. Use a convection oven if available for an even more delightful crispiness.
