Ingredients

Burger Mixture
  • 1.25 lbs Italian turkey sausage Use fragrant varieties like hot or sweet.
  • 1.33 lbs 93/7 lean ground turkey Keeps the burgers juicy while being lower in fat.
  • 0.5 teaspoons freshly ground black pepper Adds a warm spiciness.
  • 2 teaspoons Worcestershire sauce Brings umami flavors.
  • 2 teaspoons Dijon mustard Adds a hint of tanginess.
To Serve
  • 8 pieces hamburger buns Choose fluffy, soft buns.

Method

Preparation
  1. Remove the sausage meat from the casings using kitchen shears and place it into a large mixing bowl.
  2. Add the lean ground turkey, freshly ground black pepper, Worcestershire sauce, and Dijon mustard to the sausage meat. Mix everything until well combined.
  3. Divide the mixture into eight equal portions and form them into patties, about ½ inch thick.
  4. Place your patties on a foil-lined baking sheet, cover, and refrigerate them until ready to grill.
Cooking
  1. Clean the grill grates thoroughly and preheat the grill to high. Rub the grates with oil to prevent sticking.
  2. Place your turkey patties on the grill and cook for about five minutes, until grill marks appear. Flip and cook for an additional 3 to 5 minutes until no longer pink in the center.
  3. Lay the hamburger buns on the grill to warm them up and give them a light toast.
Assembly
  1. Remove the burgers from the grill, place them on the toasted buns, and add your favorite toppings.

Notes

Don't overmix the meat to avoid dense burgers. You may prepare the patties a day ahead for convenience. Ensure the internal temperature reaches 165°F (74°C).
