Preparation
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic; cook for about 5-6 minutes, stirring occasionally until softened and fragrant.
- Sprinkle in the grated ginger, turmeric, and sweet paprika. Sauté for an additional minute to release their essential oils and deepen the flavors.
- Toss in the diced celery, carrots, and zucchini. Sauté for another 2-3 minutes until they start to soften.
- Using tongs, add the chicken breast into the pot, followed by the chicken or vegetable broth. Increase the heat to bring everything to a boil, then reduce to a gentle simmer. Allow it to cook for 30 minutes.
- After simmering, carefully remove the chicken breast from the pot. Use two forks to shred it into bite-sized pieces. Return the shredded chicken to the pot, along with the kale.
- Season with salt and optional black pepper. Continue to simmer for 2-3 more minutes until the kale is wilted and vibrant.
- Ladle the soup into bowls and garnish with fresh parsley.
Notes
For an enriched flavor, consider adding a squeeze of fresh lemon juice right before serving. Experiment with different greens like spinach or Swiss chard for a unique twist. For added texture, top your soup with toasted nuts or seeds.
