Method

Preparation
  1. Cook and drain the lasagna noodles according to package instructions or use oven-ready noodles.
  2. Preheat your oven to 350ºF.
  3. In a deep 9x12" baking dish, spread a thin layer of Alfredo sauce on the bottom to prevent sticking and add flavor.
Layering

  2. Spread a thin layer of ricotta cheese atop the zucchini, then sprinkle with mozzarella cheese and season lightly with salt, pepper, and Italian seasoning.
  3. Top this layer with a layer of cooked lasagna noodles.
  4. Repeat the layering process, alternating with yellow squash, spinach, and carrots, adding Alfredo sauce, ricotta, mozzarella, and seasonings with each layer, finishing with noodles.
  5. After the last layer of noodles, spread the remaining Alfredo sauce on top and sprinkle the remaining mozzarella and a dash of cheddar cheese.
Baking
  1. Bake for 35-40 minutes or until the center is hot and the white sauce is bubbling.

Notes

Use fresh vegetables for the best flavor. For a quicker option, consider using oven-ready lasagna noodles. Spice it up with nutmeg or fresh basil for added depth. Allow the lasagna to cool for a few minutes to maintain its shape when cutting.
